Thursday? Seriously?

My sister came over yesterday. Not only did she bring her darling grandson to play with my darling grandchildren, she brought produce fresh from her garden!

Zucchini, summer squash, green beans, and green peppers - what to DO with those?

I had an onion, a tomato, some garlic, and some mozzarella cheese...

This was VERY good!

I could eat it every day.

The only spice I add is a bit of black pepper on top!
The green beans shall remain in the colander for a crunchy snack all day long, as I like them better raw than cooked.

This looks absolutely delicious. Did you stir fry, then add cheese? Or is that ranch dressing on top? And I love to snack on fresh crunchy green beans, too. Please let me know, as I'm sure this is something Dear Hubby and I would love...and we have zucchini coming on like crazy!
